Scones with Jam

Cooking mode

For the scones

  • 200g gluten-free flour
  • 75g margarine
  • 30g sweetener
  • 1 tsp baking powder
  • 200ml milk of choice
  • 1 tsp vanilla extract

For the jam

  • 100g frozen berries
  • 2 tbsp sweetener
  • 3 tbsp chia seeds
  • Cream cheese, to serve

Utensils

  • Step 1

    Make the scones: place the flour, margarine, sweetener and baking powder into your Ninja Kitchen blender and pulse a few times until breadcrumbs form. Gradually add the milk and vanilla extract and pulse again to form a dough.

  • Step 2

    Place onto a floured surface and roll out. Cut out round shapes using a cutter and repeat until all the mixture has been used up. Place on a lined baking tray and brush each scone with extra milk.

  • Step 3

    Bake at 180C for 12-15 minutes until risen and golden, then leave to cool.

  • Step 4

    Meanwhile  make the jam: Place the berries in a pan and simmer for 8-10 minutes. Remove from the heat, stir in the sweetener and chia seeds and allow to form a jam (leave for 20 minutes to thicken).

  • Step 5

    Once the scones have cooled, serve spread with cream cheese and the jam. Enjoy!
