Herby Mustard Mash

Mashed potato is one of my top comfort foods and this herby mustard version is definitely a new favourite. Try serving this with sausages in place of your usual mash, or some roast chicken and veggies.

Ingredients

  • 1kg potatoes
  • 400ml cold water
  • 2 tbsp olive oil
  • 5 tbsp plant milk
  • 1 tbsp dijon mustard
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • Large pinch salt

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

Method

  • Step 1

    Add the water to your ninja foodi pot, with the air-fryer basket on top

  • Step 2

    Peel and chop the potatoes into 1 inch cubes

  • Step 3

    Put the chopped potatoes in the basket, placing the pressure cooker lid on top with the vent closed

  • Step 4

    Set the steamer option to 10 minutes

  • Step 5

    Once the steamer has finished, open the vent to allow the pin to drop

  • Step 6

    Place the chopped potatoes in a bowl with the oil, plant milk, mustard and salt

  • Step 7

    Mash until smooth and creamy

  • Step 8

    Stir through the chives and parsley

  • Step 9

    Serve straight away
