Roasted Cauliflower with Peri Peri Relish

This is a flavoursome relish with slight tang and kick, which is perfect on roasted vegetables or even tofu.

Cooking mode

  • 1 large head of cauliflower (cut into florets)
  • 2 shallots (finely sliced)
  • 1 red pepper (cut into chunks)
  • 20ml white wine vinegar
  • 120ml extra virgin olive oil
  • 15g fresh coriander (finely chopped)
  • 20g fresh basil (finely chopped)
  • 1 juice from lemon
  • 1 tsp smoked paprika
  • 3 garlic cloves (crushed)
  • 2 red chillies (diced)
  • A pinch salt and pepper

Utensils

  • Step 1

    Begin by preheating the oven to 180c and scattering the cauliflower florets onto a baking tray. Drizzle with oil, season with salt and then place into the oven to roast for 30 minutes.

  • Step 2

    Whilst the cauliflower is roasting make the relish. Place the rest of the ingredients into the ninja and blend on the puree function for 15-20 seconds or until desired consistency is reached. Taste and season with a pinch more salt if you feel is needed.

  • Step 3

    Serve on top of the roasted cauliflower once cooked as a tasty side dish or even snack. Enjoy!
