Baked golden brown Falafel that is crispy and gold on the outside and deliciously tender on the inside. Al healthy alternative to a popular recipe.

- 200g uncooked Chickpeas (soaked for 24 hours)
- 1/2 Onion diced
- 4 cloves Garlic
- 1 tsp ground Cumin
- 1 tsp ground Coriander
- Salt
- 1/2 tsp Cayenne Pepper
- 1 tsp Black Pepper
- 1/4 cup Parsley leaves
- 1/2 cup Coriander leaves and stalks
- 1 tbsp Olive Oil
- 1/2 tsp Baking Powder
- Olive Oil to drizzle over the top

Step 1
Drain the Chickpeas and pat dry.

Add all the ingredients apart from the baking powder into the food processor, and blitz until blended coarsely.

Transfer the mixture to a bowl, cover and leave in the fridge for an hour. Mix in the baking powder.

Scoop 1 – 1.5 tablespoons of the mixture into patties with wet or lightly oiled hands.

Preheat oven to 200c/Gas mark 6.

Drizzle olive oil over the falafel in the tray. Bake 12 minutes, then flip and bake for 10 – 15 more minutes.
