Spiced Butternut Squash with Halloumi & Chickpeas

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 1 large butternut squash, peeled and sliced
  • 1 block Halloumi, sliced
  • 1 can chickpeas, drained
  • 1 tbsp rose harissa paste
  • 2 tbsp honey
  • 1 tbsp plus 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 cup pomegranate seeds
  • To garnish parsley

Utensils

  • Step 1

    Insert cooking pot in unit and close lid. Select ROAST, set temperature to 180C and set time to 30 minutes. Select START/STOP to start preheating

  • Step 2

    White the Ninja is preheating, put the squash pieces in a bowl, add 1 tbsp olive oil and salt. Mix to coat well

  • Step 3

    When it beeps that it’s preheated, add the squash pieces and close the lid

  • Step 4

    Flip them after 15 minutes

  • Step 5

    In a small bowl, mix the harissa, honey and 1 tsp olive oil

  • Step 6

    After it’s been roasting for 25 minutes add the honey & harissa mix and make sure all the squash pieces are coated

  • Step 7

    Add the Halloumi and chickpeas, mix gently and cook for the final 5 minutes

  • Step 8

    Transfer to a serving dish, sprinkle over the pomegranate seeds and parsley and serve
