Spiced Apple & Raisin Nut Butter Muffins

Cooking mode

  • 120g oats
  • 50g gluten-free flour
  • 70g coconut sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 4 tbsp nut butter of choice (almond or peanut work well)
  • 50ml almond or oat milk
  • 1 egg or flax egg
  • 1 tsp vanilla extract
  • 1 large apple, diced
  • 75g raisins

To decorate

  • 2 tbsp smooth nut butter
  • 2 tbsp maple syrup
  • 1 tsp oat or almond milk
  • Chopped nuts 

Utensils

  • Step 1

    Preheat the oven to 180C and grease a 6-hole muffin tin.

  • Step 2

    Place the oats, flour, coconut sugar, cinnamon, baking powder, nut butter, milk, egg and vanilla into your Ninja Kitchen Nutri Ninja food processor and blend until the ingredients come together. Stir in the apple pieces and raisins.

  • Step 3

    Divide the mixture between the tin (fill each to the top) and bake for 20 minutes until golden.

  • Step 4

    While cooling, whisk together the nut butter with maple syrup and milk then drizzle over each and sprinkle over chopped nuts. Enjoy!
