Spicy Fish Tacos

My favourite Mexican dish has got to be fish tacos! This quick and easy recipe is perfect served with some spicy rice or refried beans. Cooking the fish in the Ninja Foodi MAX Dual Zone Air Fryer means you get juicy fish fillets with delicious crispy edges. I love to serve up all the ingredients as a spread and let everyone build their own. Pomegranate seed toppings work perfectly with the spicy marinade.

Ingredients

Fish and marinade

  • 2 fillets cod
  • 2 tsp minced garlic
  • Juice of 1 lime
  • 1 spring onion
  • 1 tsp chipotle chilli flakes
  • 2 tbsp chipotle paste
  • Handful fresh coriander

Tacos

  • 1 avocado, sliced
  • 4-6 corn tortillas
  • 1 red onion, diced
  • Shredded lettuce
  • Pomegranate seeds
  • 1 fresh red chilli

Method

  • Step 1

    Start by cutting the cod fillets into 1–2-inch strips. Chop spring onion and mix all marinade in a bowl

  • Step 2

    Place marinade mix and cod into a plastic resealable bag. Make sure the fish is coated well and refrigerate for 20-30 minutes

  • Step 3

    Dice red onion, tomato, lettuce, avocado, spring onion and chilli. I like to put all the ingredients in separate bowls so everyone can build their own tacos

  • Step 4

    Once the time is up, remove cod from the fridge and place into the Ninja Foodi MAX Dual Zone Air Fryer draw and set to air fry on 200 degrees for 12 minutes

  • Step 5

    Rotate the cod for 10 minutes to ensure even cooking

  • Step 6

    Whilst the cod cooks in the Ninja Foodi MAX Dual Zone Air Fryer, warm your tortillas in a hot pan for around 10 seconds on each side

  • Step 7

    Finally, build the tacos! These go well with a side of pinto or refried beans, some spicy Mexican rice, or my favourite – margaritas!
