This super simple soup is bursting with green veggies and plant based goodness. The garlic packs a serious punch of flavour and you only need a few basic ingredients! There’s minimal cooking required and is a great option for a quick lunch or dinner!

- 1 whole head (approx 300g) broccoli
- ½ can chickpeas (drained and rinsed)
- 2 cloves fresh garlic
- For cooking olive oil
- Large handful baby spinach
- To taste black pepper
- 300ml veg stock

Step 1
Start by breaking the broccoli into florets. Heat a little olive oil in a frying pan and crush in the garlic cloves. Add the broccoli and sauté over medium heat until vibrant and tender. Leave to cool.

In your Ninja blender, combine the cooked broccoli, spinach, cold stock and chickpeas, then blend until really smooth and creamy. Add more stock if needed, then season to taste with black pepper

Heat gently on the hob until piping hot, then serve with your favourite bread
