Christmas Spice Apple Pies

Not a mince pie fan? This is the perfect alternative for you this Christmas! Welcome Christmas Spice Apple Pies!Instead of mincemeat they’re filled with cooked apples and plenty of warming spices such as cinnamon and ginger to give that Christmassy flavour. Each pie is packed full of flavour, the gluten free pastry is buttery and soft, the pies are perfect on their own but they’re even better with a dollop of dairy free cream or perhaps some coconut yogurt.

Ingredients

For the pastry

  • 160g buckwheat flour
  • 100g ground almonds
  • 4 tbsp coconut oil OR vegan butter
  • 6 medjool dates
  • 2 tbsp flaxseed mixed with 8 tbsp water
  • 1/2 tsp cinnamon powder
  • 4-5 tbsp water

For the filling

  • 500g brambly apples - peeled, cored and chopped into small pieces
  • 4 tbsp maple syrup
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp vanilla extract

Method

  • Step 1

    Pre-heat the oven to 160 degrees celsius.

  • Step 2

    Start by making the filling. To do this, add the prepared apple pieces to a saucepan along with all the other filling ingredients. Gently cook over a low heat for around 15 minutes. You want the apple to be nice and soft!

  • Step 3

    Now to move onto the pastry. Combine the flaxseed and water together. Allow to sit for a few minutes to thicken up.

  • Step 4

    Add all the pastry ingredients to a food processor (including the now thickened flaxseed mixture) and blend together until a dough forms.

  • Step 5

    Roll the pastry out to your desired thickness. TOP TIP – roll the pastry between two sheets of clingfilm to stop it from sticking to a worktop.

  • Step 6

    Using a cookie cutter make the pie bases. Make 8-10, leaving enough pastry for the pie tops!

  • Step 7

    Grease a cupcake tray with coconut oil and add the bases to the tray. Bake the pie bases in the oven for around 5 minutes, just to allow the bases to cook slightly!

  • Step 8

    Add around 1 heaped teaspoon of the apple mixture to the centre of each pie.

  • Step 9

    Cut the remaining pastry into pie lids – I like to make mine into stars! Then place on top of each filled pie.

  • Step 10

    Place the pies into the oven to bake for 10-12 minutes, until golden brown!

  • Step 11

    Allow to cool for at least 20 minutes before digging in!
