A super easy, super creamy and super delicious plant-based mushroom soup. You can use any type of mushrooms for this recipe. You can double up on the recipe ingredients and make extra to last you a few days or freeze.

- 1 tbsp Olive oil
- 450g Sliced mushrooms
- 6 Crushed garlic cloves
- 1 Medium onion (sliced)
- 200ml Dairy-free milk alternative
- 700ml Vegetable stock
- To taste Salt and pepper

Step 1
Add the onion in to the jug of the Ninja Foodi Blender & Soup Maker and select the saute function. Leave to caramelise for 2-3 minutes, then add the crushed garlic and sliced mushrooms and cook until soften – approximately 12 minutes

Step 2
Add the remaining ingredients in to the jug, secure the lid and select smooth soup

When the smooth setting has finished, taste and adjust seasoning if needed

Top with toasted bread and some cooked mushrooms
