Chocolate Cardamom Cookies
These Cardamom and Chocolate Cookies are chewy, aromatic, gently warming and delicious.

Cooking mode

- 125g butter
- 140g dark muscovado sugar
- 50g caster sugar
- 1 egg
- 200g plain flour
- Pinch salt
- 1 tsp bicarbonate of soda
- 3/4 tsp ground cardamom
- 200g milk, dark or white chocolate, chopped roughly
Utensils

Step 1
Melt and cool the butter for 10 minutes.

Beat melted butter, muscovado sugar and caster sugar for 3 – 4 minutes in the bowl of a stand mixer.

Add the egg and mix through.

Fold in the flour, salt, bicarbonate of soda, cardamom and chopped chocolate.

Mix just enough to form a dough then place in the fridge for at least an hour or overnight.

Use a teaspoon to portion the dough into 20 – 25 scoops, then press each cookie down to make it round.

Preheat Grill at 200 C.

Once the unit has preheated, bake the cookies on greaseproof paper, in batches (with 1 inch space between each cookie) at 200 C for 8 minutes using the Bake function.

Allow to cool for 10 minutes.
