Porridge

Ready in 10 minutes this Keto Porridge is so easy to make but delicious and filling too. With a whopping 13g of fibre per bowl, 5g of net carbs, and 28g of healthy fats it makes for a great start to the day.

Utensils required

Ingredients

  • 2 tbsp/14g milled flaxseed/linseed
  • 2 tbsp/16g coconut flour
  • 2 tbsp/10g desiccated coconut
  • 2 tbsp/12g ground almonds
  • 2 tbsp/20g sugar-free icing sugar (erythritol stevia blend)
  • 1 tbsp/9g hulled hemp hearts
  • 1/4 tsp vanilla powder
  • Generous pinch salt
  • 250ml coconut milk (fresh from carton not tinned)
  • 125ml water

Optional toppings

  • 1 tbsp mixed seeds
  • Small handful berries

Method

  • Step 1

    Place all of the ingredients except for the coconut milk and water into the saucepan. Use a whisk to stir them together then gradually whisk in the coconut milk followed by the water. Leave to sit for 5 minutes.

  • Step 2

    Place onto a low-medium heat and bring to a low boil, whisk continuosly for 3 to 5 minutes until thickened. Transfer to a bowl and serve with a tablespoon of mixed seeds and a small handful of berries if you wish.
