Lemon Curd Cookies
A deliciously zesty lemon cookie recipes, stuffed with zesty lemon curd, the butter cooking dough is loaded with poppy seeds. This recipe makes approximately 10-12 cookies.

- 150g unsalted butter (melted)
- 120g light brown sugar
- 80g white sugar
- 230g plain flour
- 1 zest from lemon
- 4 egg yolks
- 1 tsp bicarbonate of soda
- 10-12 tbsp frozen lemon curd
- sea salt flakes (optional)

Step 1
Using the bowl of your food processor and the dough blade, add the light brown sugar, white sugar and butter and select low for approximately 30 seconds and mix them together.

Add the flour, egg yolks and bicarbonate of soda and select low again for 30-60 seconds to mix all of the ingredients together and create the cookie dough. Add the zest and select low again for 10-20 seconds to mix the rest with the dough.

Place the cooking dough in the fridge for approximately 30 minutes.

Remove the cookie dough from the fridge, using an ice-cream, scoop the cookie dough into balls, then flatten the cookie dough and place the frozen lemon curd on top of the dough. Roll the dough back into a ball making sure the lemon curd is tight inside the cooking dough ball.

Step 5
Set your mini oven to bake at 170C degrees (if you are using a regular oven, preheat the oven for 15 minutes before). Place the cookie dough balls in a baking tray lined with greaseproof paper with a large gap in between each cookie.

Place in the oven and bake for 14-15 minutes. Sprinkle with sea salt flakes and enjoy.
