If you fancy making soup but can’t be bothered with loads of ingredients or haven’t got lots of time, this is the soup for you! So simple yet so delicious, filling and full of nutrients.

- 800g butternut squash, peeled
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 600ml vegetable stock
- 2 cloves garlic
- 1 small red chilli
- 6g fresh coriander
- N Salt & pepper

Step 1
Add the onion to a saucepan with a dash of olive oil over a medium heat and cook slowly until golden.

Cut the squash into small chunks (about 1.5-2cm) and add to them the oil along with the stock. Cook until the squash is tender, about 20 minutes.

Add the garlic, coriander and chilli.

Cook for another five minutes then add to your food processor and blend until smooth.

Return to heat. Serve with a garnish of coridander. Best consumed with 2 days.
