These air-fried curried cauliflower fritters are great enjoyed as a starter or a snack, hot or cold and are accompanied by a lightly spiced mint yogurt dip

Cooking mode

- 1 medium sized head of cauliflower
- 1 egg
- 1-2 tbsp flour
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1 tbsp fresh chopped coriander
- 1-2 cloves garlic, minced
- 1/2 tsp ginger powder or grated ginger
- To brush oil
For the yogurt dip
- 100g Greek yogurt
- Handful chopped mint
- Squeeze lemon juice
- 1/2 tsp icing sugar
- 1 green chilli, finely chopped
- To taste salt and pepper

Step 1
Place the flat plate in the grill and preheat on airfry at 200ºC

In the meantime grate the cauliflower with a kitchen grater and mix with the rest of the ingredients until well combined. Form 4-6 balls and press them down between your hands to form the fritters

Once the air-fryer has preheated open it and brush the flat plate with oil, then place the fritters on the plate and brush their top with oil as well

Close the lid and cook for 5 mins, then turn the fritters over and cook for further 2-3 mins

To make the dip mix all the ingredients in a bowl

Serve the fritters garnished with chopped coriander and with the dip on the side or drizzled over them
