Baked Salmon with Leeks & New Potatoes

- 500g baby new potatoes
- 3 tablespoons olive oil, divided
- 1 teaspoon fennel seeds
- Sea salt and freshly ground pepper, as desired
- 600g salmon fillet
- Zest and juice 1 lime
- 10g spring onions, white part only, chopped
- 10g fresh coriander leaves
- 500g leeks, cleaned and sliced into 2cm lengths

Step 1
Preheat oven to 200°C/Fan 180°C.

Place potatoes, 2 tablespoons oil, fennel seeds, salt, and pepper in the Ninja Foodi Zerostick Roasting Tin. Toss potatoes to combine. Place the potatoes in oven for 20 minutes.

Meanwhile, marinate salmon by sprinkling with lime zest, juice, spring onions, coriander and salt and pepper as desired. In a bowl, toss leeks with remaining oil and salt and pepper as desired.

Step 4
After 20 minutes, remove roasting tin from oven, toss to ensure even cooking, and arrange potatoes around the edges of the roasting tin. Place marinated salmon fillet and leeks in centre of the tin. Place tin in the oven and cook for an additional 30 minutes.

Step 5
Cooking is complete when the potatoes are soft and the salmon flakes, or reads 58°C on an instant read thermometer.

Step 6
Slice the salmon into four portions and serve with new potatoes and leeks.
