Apple & Cinnamon Pancakes

These Apple & Cinnamon Pancakes will be your go-to weekend breakfast over the winter months! The flavours are so warming and the light texture of the pancake is what dreams are made of. Serve with a dollop of coconut yogurt and drizzle of maple syrup for something truly special. 

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 100g buckwheat flour
  • 1 apple
  • 1 tsp ground cinnamon
  • 1 tbsp flaxseed
  • 2 tbsp maple syrup
  • 80ml almond milk
  • 1 tsp baking powder
  • 1 tsp coconut oil

Utensils

  • Step 1

    Grate the apple then add to your food processor along with all the other ingredients – apart from the coconut oil. 

  • Step 2

    Blend on the puree setting of your Ninja Kitchen food processor and you have a smooth mixture. 

  • Step 3

    Add the coconut oil to a frying pan over a medium heat and allow to heat thoroughly.

  • Step 4

    Spoon around 2 tbsp of the pancake batter into the frying pan to make a pancake. Cook on one side for around 3-4 minutes, or until bubbles begin to appear on the surface. Flip and cook on the other side for a further 2-3 minutes. 

  • Step 5

    Repeat with the rest of the mixture.

  • Step 6

    Serve the pancakes with coconut yogurt, extra apple and a drizzle of maple syrup!
