  • 100g oats
  • 100g pomegranate seeds
  • 1 ripe banana
  • 1 whole eggs
  • 1/2 tsp baking powder
  • Pinch salt
  • Dash vanilla extract
  • For cooking coconut oil

Method

  • Step 1

    To make the pancake batter, combine all of the ingredients apart from the pomegranate seeds & coconut oil in your Ninja blender and blitz to create a smooth batter.

  • Step 2

    Heat a little coconut oil in a non-stick frying pan and bring to a medium heat.

  • Step 3

    Pour in little of the mixture & sprinkle with a few pomegranate seeds and cook until bubbles start to appear on the surface. Repeat this for the remaining mixture.

  • Step 4

    Stack your pancakes and add all of your favourite toppings.
