Step 1
Preheat the oven to 180C and grease and line a 9x9in baking tin.
Step 2
Make the blondies: Place the flour, baking powder, cinnamon, nutmeg, oil, coconut sugar, egg, maple syrup and vanilla into your Ninja Kitchen Nutri Ninja blender and whizz up until a batter forms.
Step 3
Toss the diced apples in the lemon juice to coat then tip into the mixture and fold in. Spoon into the tin and smooth out evenly.
Step 4
Next place the flour, dairy-free spread, coconut sugar and cinnamon into your (cleaned) Nutri Ninja blender and pulse a few times to form a crumble mixture. Scatter this over the blondie mixture and scatter over a little extra coconut sugar.
Step 5
Bake for 35-40 minutes until risen, golden and a skewer comes out clean. Leave to cool, cut into 9-12 pieces and remove from the tin. I drizzled over some coconut caramel sauce for the finishing touch – yum!
