Two of my favourite things in one recipe – granola and banana bread!
This deliciously sweet and flavoursome banana bread granola is such a wonderful breakfast choice with cold almond milk and berries, served with a dollop of coconut yogurt as a dessert or even eaten by the handful. A must-bake for any banana bread lover out there!

coconut oil
1 tsp

1 tsp
vanilla extract

Utensils
Step 1
Add the oats, walnuts, cinnamon, vanilla extract and pinch of salt into a mixing bowl
Step 2
Add the banana, maple syrup and coconut oil to your food processor and blend until smooth
Step 3
Pour this smooth mixture into the mixing bowl with the dry ingredients and mix well
Step 4
Line a baking tray with baking paper and spread the granola mixture onto it. Make sure it’s packed down really well, this will help to make delicious crunchy clusters of granola
Step 5
Bake in the oven for around 20 minutes, or until golden. Allow to cool completely before removing from the baking tray
