  • 2 ripe bananas
  • 1 1/3 cup of flour, sifted
  • 1 egg
  • 1 egg yolk
  • 3/4 cup of buttermilk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Oil for frying

  • Step 1

    Mix all dry ingredients together.

  • Step 2

    In a bowl of food processor add all wet ingredients and mix well until combined.

  • Step 3

    Add dry ingredients, mix until incorporated. Set aside for 5 min.

  • Step 4

    Heat up frying pan on a medium heat.

  • Step 5

    Fry each pancake on both sides until golden brown.

  • Step 6

    Serve with fresh fruit, jam or maple syrup.

  • Step 7

    Tip: you can seep regular flour to light spelt flour. Tip 2. Keep greasing your pan with frying oil for each new batch of pancakes or they might get stuck to the pan.
