Autumnal nourishing, warming Barley Soup with yoghurt. This is a hearty soup that is nutritious and delicious.

- 1 tbsp Oil
- 1 Onion, diced
- 1 Garlic Cloves, crushed
- 150g Pearl Barley
- 1 tsp Thyme
- Salt and Pepper
- 1l Vegetable Stock
- 500ml Water
- 3 tbsp Greek Yoghurt
- 2 tbsp Parsley, chopped

Step 1
Heat oil in Ninja Foodi on saute mode.

Add Onion. Cook until golden brown – 7 – 10 minutes. Stirring occasionally. You may need to add a couple of tablespoons of water to avoid it catching.

Add Garlic. Cook for 1 minute.

Add Barley. Mix through.

Add Thyme. Season with Salt and Pepper.

Pour in Vegetable Stock and water.

Put the lid on, seal the vent and cook the soup on manual high pressure for 20 min. Do a quick release.

Stir in the yoghurt and select saute. Cook for 1 minute.

Add chopped parsley. Serve warm.
