Butternut Squash & Red Onion Dahl
This super simple recipe can be made in only 15 minutes – perfect for a busy week night dinner.
You can even experiment with adding different vegetables and spices to this basic but flavoursome recipe

- 300g butternut squash (peeled, chopped and de-seeded)
- 100g red onion (peeled and chopped)
- 400g red lentils
- 200g sweetcorn
- 200g spinach
- 500ml water
- 2 tsp or 1 small stock cube vegetable stock powder
- 2 tsp medium curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
Utensils

Step 1
Add all of the ingredients, apart from the sweetcorn and spinach, to the Ninja Foodi Multi-Cooker and stir

Step 2
Place the Pressure Lid on your Ninja Foodi Multi-Cooker. Select ‘pressure’ for 5-8 minutes. Choose 5 minutes for firmer lentils and 8 minutes for a fluffier dahl

Once the dahl is cooked be sure to release the pressure before opening the lid

Stir in the sweetcorn and spinach, which will wilt and cook through with the heat of the dahl

Leave it to cool slightly before serving

Serve with brown rice, fresh coriander and a squeeze of lemon
