Caramelised Onion Hummus

If you’re looking for a mouth-watering dip, this is the recipe for you. This caramelised onion hummus is the ultimate crowd pleaser with a slightly sweet, tangy, rich flavour that’s perfect with crudités, pitta bread, crackers, falafels or even homemade chips!

Cooking mode

  • 1 x 400g tin chickpeas
  • 1 red onion
  • 3 tbsp tahini
  • 6 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1/2 tsp cumin
  • 1 tbsp balsamic vinegar
  • Pinch of salt

Utensils

  • Step 1

    Peel and chop the onion.

  • Step 2

    Add 1 tbsp olive oil to a frying pan over a medium heat.

  • Step 3

    Once the oil has warmed, add the onion and sauté for about 4-5 minutes until they soften. Add the balsamic vinegar and continue to cook for a further 5 minutes on a low heat, stirring occasionally. Allow to cool.

  • Step 4

    Drain and rinse the chickpeas and add to your food processor along with the onions and all the other ingredients.

  • Step 5

    Blend using the puree setting until the hummus is smooth.6.Keep refrigerated and consume within 4 days.
