Caribbean Roast Chicken

Utensils required

Ingredients

  • 1.35kg (small) whole chicken
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp curry powder
  • 1 tsp ground pimento
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 tbsp melted butter
  • 1 small onion
  • 4 sprigs fresh thyme
  • 1 spring onion
  • 4 garlic cloves
  • 1 whole scotch bonnet or chilli
  • 125ml water or chicken stock

For the gravy

  • 125ml water
  • 2 tbsp chicken granules

Method

  • Step 1

    In a mixing bowl add salt, black pepper, curry powder, pimento, paprika and mix together. Score the chicken with a knife and add some oil and butter then add seasoning mix on the chicken and massage all over

  • Step 2

    Stuff an onion, fresh thyme, spring onion and scotch bonnet pepper garlic into the cavity of the chicken, then add the marinate

  • Step 3

    On the Ninja Foodi Multicooker set to pressure, then open lid and add 125ml of water or chicken stock to the large bowl, then place the grid on top of the bowl and add the chicken into it. Pressure cook the chicken on high for 22 minutes until cooked. Carefully release the pressure, remove the pressure cooking lid and then air fry for 8 minutes until crispy

  • Step 4

    Using the left over juices from the chicken in the bowl then add some water and chicken granules then mix together to form a gravy

  • Step 5

    Serve with rice and salad!
