Cooking mode

  • 100g gluten- free flour
  • 50g oat flour
  • 80g coconut sugar
  • 1 tsp baking powder
  • 2 tsp mixed spice
  • 1 egg
  • 200ml milk of choice
  • 2 tbsp oil
  • 1 tsp vanilla extract
  • 40g raisins or sultanas
  • 40g walnut pieces

To serve

  • natural/ coconut yogurt
  • maple syrup or coconut nectar
  • flaked almonds or more walnuts

Utensils

  • Step 1

    Place the flours, sugar, baking powder, mixed spice, egg, milk, oil and vanilla into your Ninja Kitchen food processor and blend well to form a batter, then stir in the raisins or sultanas and walnuts.

  • Step 2

    Either heat a greased waffle pan and spoon the batter in batches to fill the pan and cook, or grease a silicone mold and bake in the oven for 15 minutes until fluffy, risen and golden.

  • Step 3

    Serve hot with yogurt, a drizzle of syrup and sprinkle of nuts.
