Chicken Tacos with Creamy Avocado Dressing

A fun recipe for the whole family full of goodness and colour. With a creamy delicious dressing that can be used in a variety of ways.

Cooking mode

  • 1 large avocado
  • 1/2 juice from lime
  • ¼ tsp garlic granules
  • ¼ tsp salt
  • 70ml dairy free milk
  • 350g vegan chicken strips
  • Oil of choice
  • 3 tbsp canned sweetcorn
  • 6 mini tacos
  • 100g cherry tomatoes (halved)
  • 40g red cabbage(finely shredded)
  • Shredded lettuce
  • Vegan mayonnaise
  • Chilli flakes to garnish

Utensils

  • Step 1

    Begin by heating up the vegan chicken strips as per instructions using oil of choice.

  • Step 2

    Meanwhile heat a separate pan on a high heat and once hot add the sweetcorn. Stir every couple of minutes until charred on both sides.

  • Step 3

    Heat the tacos up should you wish and spread some vegan may onto them. Add the lettuce, red cabbage, tomatoes, charred corn and cooked chicken to the tacos.

  • Step 4

    Next prepare the dressing by adding the avocado, lime juice, garlic granules, salt and milk to the blender. Blend until smooth and creamy.

  • Step 5

    Drizzle over the tacos and add some chilli flakes should you wish. Enjoy.
