Chicken Tikka Masala

For the chicken tikka

  • 600g chicken breast, diced
  • 1 Juice from lemon
  • 100g yogurt
  • 2 tsp ginger powder
  • 2 tsp garlic powder
  • 1 tbsp coriander
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp white pepper

For the masala sauce

  • 1 jar chicken tikka paste
  • 400ml jar carrot and coriander soup
  • 3 tbsp tomato puree mixed with 3 tbsp water
  • 75g ground almonds
  • 200 ml coconut milk
  • Fresh coriander to garnish

Utensils

  • Step 1

    Place the diced chicken in a bowl and add the lemon juice to it , mix and leave to marinate for 5.

  • Step 2

    In the mean time mix all the dry spices for the tikka marinate, add them to the chicken together with the yogurt and mix well. Marinate for minimum of 20 mins.

  • Step 3

    Turn the ninja on and select the sear/sauté function Hi5, add the tikka paste and fry for 1-2 mins until flavours start developing, then add the ground almonds and mix in. Cook for another minute then add the carrot and coriander soup, tomato puree and coconut milk. Bring to the boil.

  • Step 4

    Place the chicken on the reversible rack and place the rack in the Ninja bowl, close the lid and select the steam air fry function. Set the timer to 8 mins at 200ºC.

  • Step 5

    Once the cooking has finished add the chicken to the sauce and stir in. Garnish with coriander and serve with steamed rice and naan bread .
