Chicken Tinga Tortillas

- 2 tbsp olive oil
- 2 onions, peeled and sliced
- 2 garlic cloves, peeled and crushed
- 3 tbsp chipotle chilli sauce
- 2 tsp cumin
- 1 tsp cinnamon
- 1 tsp oregano
- 1 can (400g) chopped tomatoes
- 2 tbsp light brown sugar
- 200ml chicken stock
- 650g boneless skinless chicken thighs
- sea salt, as desired
- ground black pepper, as desired
Salsa
- 1 small red onion, peeled, finely chopped
- 3 ripe tomatoes, finely chopped
- 1 zest and juiceof lime
- 1 chilli, deseeded, finely chopped
- 1 small bunch coriander, leaves and stalks finely chopped, plus extra leaves to serve

- guacamole, as desired, to serve
Utensils

Step 1
Move slider to AIR FRY/ HOB. Select SEAR/SAUTE and set to 4. Add oil and preheat for 3 minutes.

Add sliced onions to pot and saute for 10 minutes until soft, stirring constantly. Add garlic, chipotle chilli sauce, and spices. Stir to combine and cook for another minute. Stir in tomatoes, sugar, stock, salt, pepper and chicken. Select START/ STOP to stop cooking.

Close the lid and move slider to PRESSURE. Make sure the pressure release valve is in the SEAL position.

The temperature will default to HIGH, which is the correct setting. Set time to 10 minutes. Select START/ STOP to begin cooking (the unit will build pressure for approx. 5 minutes before cooking begins).

When cooking is complete, select START/STOP and quick release pressure by moving the pressure release valve to the VENT position. When steam is released the display will read Opn. Move slider to AIR FRY/HOB to unlock the lid and carefully open it.

Use silicone-tipped tongs to transfer the chicken thighs to a cutting board. With two forks, shred the chicken, then place back into the pot and stir to combine. Season sauce to taste with salt and pepper.

Select SEAR/SAUTE and set to 4. Bring sauce to a simmer for 5 minutes or until desired thickness is achieved.

To make the salsa, add the red onion, tomatoes, lime, chilli, coriander leaves and stalks, salt and pepper to a medium bowl and stir to combine. Serve the chicken or wraps, with tomato salsa, guacamole, and coriander leaves.
