Chocolate & Orange Sorbet

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 35g cocoa powder
  • 100g light muscovado sugar
  • 1 zest of orange
  • A pinch fine sea salt
  • 150ml boiling water
  • 150ml cold water
  • 65g dark chocolate, roughly chopped
  • 45g milk chocolate, roughly chopped
  • 1/8 tsp xanthan gum

Utensils

  • Step 1

    Whisk cocoa powder, sugar, orange zest and salt together in a bowl.

  • Step 2

    While whisking, slowly add the boiling water and continue whisking until combined.

  • Step 3

    Add cold water and chopped chocolate to bowl and leave to stand for a minute until chocolate melts.

  • Step 4

    Sprinkle xanthan gum into chocolate mixture and quickly blend with stick blender or whisk vigorously for 30 seconds.

  • Step 5

    Transfer mixture to the tub and place into an ice bath. Once cooled, place storage lid on tub and freeze for 24 hours.

  • Step 6

    Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 7

    Select SORBET.

  • Step 8

    Once processing is complete, add mix-ins or remove sorbet from tub and serve immediately.
