Cinnamon Apple Granola Pots

Cooking mode

  • 75g granola
  • 250g silken tofu
  • 4 tbsp sweetener
  • 1 tsp vanilla extract 

For the cinnamon apples

  • 2 small apples, chopped
  • 1 tbsp coconut oil
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon

Utensils

  • Step 1

    First make the tofu cream: Blend the tofu, sweetener and vanilla in your blender until smooth then set aside.

  • Step 2

    Heat the oil in a pan then add in the apples and coconut sugar and cook on a medium heat for 5-10 minutes, stirring regularly. Add in the cinnamon a few minutes towards the end the set aside to cool.

  • Step 3

    Now time to assemble: Spoon some granola into the base of 4 small clear pots to fill up to ¼. Spoon some of the tofu cream on top of each one to fill up another ¼. Spoon over some spiced apples over the top of each to reach nearly the top. Finish off with some granola.

    Chill in the fridge for 1 hour to set, then enjoy!
