Coffee & Cardamom Gelato

TIP: For a stronger cardamom flavour, leave hot milk mixture to infuse up to an hour before proceeding.

  • 75ml double cream
  • 325ml whole milk
  • 8 cardamom pods, lightly crushed
  • 100g light muscovado sugar
  • 1 1/2 teaspoons cornflour
  • 3 large egg yolks
  • 5g instant coffee granules

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Bring cream, milk and cardamom pods to the boil in a small saucepan over medium heat then remove from heat and set aside to cool slightly 

  • Step 2

    Whisk sugar and cornflour in a bowl then add egg yolks and whisk until smooth. While whisking, slowly pour in the milk mixture. Once combined, pour mixture into the saucepan and return to low heat, whisking constantly, until it just comes to the boil.  


  • Step 3

    Immediately remove saucepan from heat and pour gelato base through a sieve into the tub. Discard cardamom pods. Add coffee to base and stir until dissolved, then place tub in an ice bath. Once cooled, placstorage lid on tub and freeze for 24 hours. 

  • Step 4

    Remove tub from freezer, remove lid, then place tub in outer bowl. Install paddle into outer bowl lid and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place. 

  • Step 5

    Select GELATO.

  • Step 6

    Once processing is complete, add mix-ins or remove gelato from tub and serve immediately.
