Cottage Pie

  • 1.5kg potatoes, peeled and quartered
  • 125g butter, cubed
  • 150-200ml milk
  • 1 tablespoon sunflower oil
  • 2 medium onions, diced
  • 2 carrots, peeled and diced
  • 1kg beef mince
  • 2 tablespoons tomato puree
  • 3 tablespoons Worcestershire sauce
  • 3-4 fresh thyme sprigs
  • 3 tablespoons plain flour
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1-1.2L beef stock

  • Step 1

    Fill the Ninja Possible pan with 1L of water, add steaming basket and place over high heat, bring to a boil, about 5 minutes. Add the potatoes to the steaming basket, put the lid on and cook for about 25 minutes until soft. Once potatoes are cooked, remove potatoes from pan into a bowl on the side. Rinse out pan.

  • Step 2

    Using a masher or potato ricer mash potatoes. Add butter and 100ml of milk and stir. Add more milk if needed and salt and pepper to taste.

  • Step 3

    Add oil to clean Possible Pan, place on medium heat. Stir in onion and carrot, sauté for 10 minutes until soft or until lightly browned.

  • Step 4

    Add beef to the vegetables and sauté until beef has browned for about 10 minutes. Stir in the tomato puree, Worcestershire sauce and thyme. Sprinkle flour over the meat, stir and cook for about a minute.

  • Step 5

    Slowly add stock and bring to a simmer. Once at a simmer, allow to cook until thickened, about 40 minutes. Season to taste. Remove from heat and allow to sit for 10 minutes.

  • Step 6

    Top beef evenly with mashed potatoes, smooth over with the back of a spoon or spatula. Using a fork, make ridges across the potato.

  • Step 7

    Preheat oven to 180°C. Place cottage pie in oven and cook until golden for approximately 40 minutes.

  • Step 8

    Serve immediately.
