Courgette and Miso make this a healthy and tasty soup. Use a low salt vegetable stock because Miso is salty. This is the perfect comforting yet refreshing recipe for the final days of summer.

- 2 tbsp vegetable oil
- 1 large onion, roughly chopped
- 3 cloves of garlic, crushed
- salt
- 1/4 tsp black pepper
- 3 large courgettes, cut into chunks
- 750ml vegetable stock
- 1 tbsp white miso paste
- 2 tbsp olive oil to drizzle

Step 1
Add the Oil, Onions and Garlic to the Soup Maker and select chop and then run the saute programme.

Add Salt, Pepper, Courgettes and stock.

Select the ‘smooth soup’ function.

Once cooking has finished, stir in the miso paste and select blend then low.

Serve with a drizzle of Olive Oil.
