This Creamy Goats Cheese Orzo Risotto is pure comfort!

This meal doesn’t require all the usual stirring that is involved in making risotto. The orzo absorbs all the flavour in the liquid making for the dreamiest dinner that is ready in 10 minutes.

Cooking mode

  • 1 tbsp oil
  • 2 tbsp butter
  • 4 cloves garlic, finely sliced
  • 500g orzo
  • 1 tbsp thyme
  • 1 zest and juice of lemon
  • To taste salt and pepper
  • 125ml milk (warm)
  • 750g hot stock of choice
  • 75g parmesan grated
  • 125g goats cheese

Utensils

  • Step 1

    Heat the oil in the Ninja Foodi Multi-Cooker and add the butter

  • Step 2

    Add the garlic and saute for 1 minute, before stirring in the orzo and thyme. Saute for 2 minutes then add the lemon and seasoning

  • Step 3

    Slowly pour in the stock and milk

  • Step 4

    Close the lid of the Ninja Foodi Multi-Cooker and pressure cook on high for 3 minutes

  • Step 5

    Carefully quick release the pressure and take care to remove the pressure cooking lid

  • Step 6

    Stir in the parmesan and goats cheese. Allow to sit for 2 minutes before serving
