Crispy Tofu Nuggets with Sweet Potato Fries

Perfect for a weekend fake-away, this recipe for Crispy Tofu Nuggets with Sweet Potato Fries couldn’t be easier, and thanks to the Ninja Foodi Dual Zone Air Fryer, both parts can be cooked and finish at the same time!

Cooking mode

For the batter

  • 60ml dairy-free milk
  • 2 tbsp gluten-free flour

For the breadcrumb coating

  • 1/2 cup bread crumbs
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • To taste salt and black pepper

For the sweet potato fries

  • 400g sweet potato, peeled and sliced into 1cm thick slices
  • 2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chilli powder
  • To taste salt and pepper
  • 1 tbsp olive oil

For the crispy tofu nuggets

  • 1 x 280g firm tofu, drained according to pack instructions
  • 2 tbsp cornflour
  • 2 tsp paprika
  • 1 tsp garlic powder
  • To taste salt and pepper

Utensils

  • Step 1

    Mix the cornflour, paprika, garlic powder, salt and pepper in a bowl

  • Step 2

    Chop the tofu into chunks, and then toss each chunk in the cornflour mix to coat

  • Step 3

    Now dip in the milk mixture, followed by the breadcrumb coating ensuring that each chunk is coated well

  • Step 4

    Place the potatoes in a large mixing bowl along with the seasoning and olive oil. Toss to combine

  • Step 5

    Insert the crisper plate in both drawers. Arrange the tofu pieces in zone 1, then insert drawer into the unit. Place the sweet potato fries in zone 2 and insert into the unit

  • Step 6

    Select zone 1, select air fry and set the temperature to 200C and the time to 20 minutes

  • Step 7

    Select zone 2, select air fry, then set the temperature to 180C and time to 15 minutes

  • Step 8

    When zone 2 reaches 10 minutes, remove the drawer and give it a shake, then return to continue cooking. After 15 minutes check the fries. They may need an extra 5 minutes if you want them crispier

  • Step 9

    Serve the tofu nuggets and sweet potato fries with ketchup or hot sauce – enjoy!
