Frozen Yoghurt Berry Cups

Ingredients

For the base

  • 50g rice crispies
  • 50g granola
  • 2 tbsp coconut oil
  • 2 tbsp peanut butter
  • 4 tbsp maple syrup or honey

For the topping

  • 300g Greek yogurt (can be dairy-free)
  • 6 tbsp maple syrup or honey
  • 2 tbsp freeze-dried berry powder
  • 2 tbsp coconut flour or protein powder of choice
  • 1 tsp vanilla extract
  • Kiwi fruit, sliced and frozen berries, to decorate
  • Melted white chocolate, to drizzle

Method

  • Step 1

    First make the base: Mix together the granola and rice crispies in a bowl. Melt the oil, peanut butter and syrup then pour into the bowl and mix well.

  • Step 2

    Divide between a 6 hole muffin tin (silicone ideally) and fill up to ⅓ then chill in the fridge or freezer.

  • Step 3

    Blend the yogurt, syrup/honey, berry powder, flour/protein powder and vanilla in your Ninja Kitchen Nutri Ninja food processor until smooth then pour over each base to fill the top.

  • Step 4

    Arrange the fruit on top then freeze for at least 4 hours until set.

  • Step 5

    Pop out of the freezer and onto a wire rack then drizzle with melted white (or dark) chocolate. Return to the freezer and pop out 5-10 minutes before eating to enjoy!
