This creamy asparagus soup is made without using dairy. A great spring and summer recipe, it can be enjoyed hot or cold – whatever the weather.

- 1 tsp oil
- 350g green asparagus - halved
- 1 shallot
- 1L water
- 2 vegetable stock cubes
- 8 ramson leaves (Baerlauch)
- To taste salt and pepper

Step 1
Add the oil, ramson leaves and shallot to the blender jug.

Select CHOP.

Add remaining ingredients, then select SMOOTH SOUP.
