This halloumi skewers recipe is the perfect summer BBQ meat alternative or can be served as an appetiser.

For the skewers
- 4 wooden skewers
- 1 pack halloumi
- 1 courgette
- 100g pineapple
- 8-10 baby tomatoes
- 1 red onion
- 1 pepper
For the sauce
- 3 heaped tbsp Greek yogurt
- 2 garlic cloves, finely grated/chopped
- Large handful spinach
- Large handful fresh basil leaves
- 2 tbsp EVOO
- 1 small lime, squeezed
- Salt & pepper
Utensils

Step 1
Plug in your Ninja Foodi Health Grill & Air Fryer and ensure the grill plate is inside

Slice your courgettes & halloumi quite chunky, around 1cm thick. Leave your baby tomatoes whole

Chop and de-seed your pepper and cut into chunks along with your pineapple

Peel and chop your red onion into small chunky slices

Now build your skewers, piercing each one through differently each time until it is full

Place them evenly on your grill lengthways and close the lid

Step 7
On the screen, press your machine ON, select grill, increase temperature to 180, select 15 minutes then press START

At around 8 minutes, check on them and carefully turn them. Close the lid and continue cooking for a total time of 12 minutes

Whilst they are cooking, in your Ninja Foodi Power Nutri Blender 3-1 with Smart Torque & Auto-iQ 1200W add of the sauce ingredients and pulse for a few seconds, add to a small serving dish afterwards

Carefully remove your skewers from your Ninja onto a plate and drizzle over the basil yogurt and enjoy!
