Halloween Peanut Butter Cookies

Delicious and super easy to make, why not give these spooky cookies a try this Halloween!

 

Tips:

You can make vegan version by switching the eggs to vegan eggs, and the butter to vegan butter.

You can use any nut flour, and any nut butter.

You can half the recipe and to one part add 1 tbsp of cacao powder to make chocolate flavour cookies.

Ingredients

  • 2 cups plain flour
  • 1 cup peanut flour (or almond flour)
  • 175g cold butter, cubed
  • 2-3 tbsp peanut butter (crunchy or smooth)
  • 2 tbsp cold water
  • 1 egg
  • 1/2 cup coconut sugar
  • 1/2 tsp baking powder
  • Pinch salt

Method

  • Step 1

    Put all ingredients apart from the butter, egg and peanut butter in the food processor bowl with a dough blade attached. Mix for 60 seconds

  • Step 2

    Add the cubes of butter and mix until the butter gets incorporated into the flour, creating a breadcrumb like mixture

  • Step 3

    Add the egg and, peanut butter, and mix. If the dough looks a bit to dry, you can add a splash of water or extra peanut butter

  • Step 4

    Mix until the dough comes together

  • Step 5

    Remove the dough from the bowl, put the dough into a round shape. Use 2 pieces of parchment paper and roll out the dough to 5 mm thick

  • Step 6

    Preheat the oven to 180 C

  • Step 7

    Line 2 baking sheets with parchment paper. Cut the dough with cookie cutters into Halloween shapes and arrange on the prepared baking sheets

  • Step 8

    Bake for 15 to 20 minutes until the edge of the cookies get slightly brown. Then cool on the cooling rack

  • Step 9

    You can keep them in the plastic container for up to a week
