HECK Spring Chicken Kofta with Asian Slaw

Ingredients

  • 800g Maris Piper potatoes, peeled, cut into 2cm chips
  • 2 tbsp oil
  • 1 tsp sea salt
  • 500g chicken spring mince
  • 5 bamboo skewers, soaked

For the Asian Slaw

  • 50ml soy sauce
  • 20ml rice wine vinegar
  • Juice of ½ lime
  • 30g sugar
  • 1 chilli, halved, seeded, finely sliced
  • 2 garlic cloves, peeled, minced
  • 2 large carrots, peeled, grated
  • 600g white cabbage, finely shredded
  • 5 spring onions, finely sliced
  • 15g mint leaves, finely chopped

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

Method

  • Step 1

    To install the grill plate, position it flat on top of the heating element and gently press down until it sits into place. Place Crisper Basket on grill, then close the lid

  • Step 2

    While holding the smoke box lid open, use the pellet scoop to pour pellets into the smoke box until filled to the top. Then close smoke box lid

  • Step 3

    Turn dial to AIR FRY. Press WOODFIRE FLAVOUR. Set temperature to 190°C and set the time to 20 minutes. With 5 minutes left, check if potatoes are cooked. Select START/STOP to begin preheating (IGN and preheating will take approx. 8 minutes)

  • Step 4

    While unit is preheating, toss potatoes, oil and salt together in a large bowl

  • Step 5

    When the unit beeps to signify it has preheated, and “ADD FOOD” is displayed, place the chips in the crisper basket, and close lid to begin cooking

  • Step 6

    When cooking is complete, remove crisper basket and chips, and keep chips warm

  • Step 7

    Turn dial to GRILL. Set temperature to MED and set the time to 10 minutes. Select START/STOP to begin preheating (IGN and preheating will take approx. 7 minutes)

  • Step 8

    Meanwhile, make koftas. Divide mince into 5 equal size portions. Roll into a sausage shape and insert skewer through the middle

  • Step 9

    When the unit beeps to signify it has preheated, and “ADD FOOD” is displayed, place the koftas on the grill plate. Close the lid to begin cooking

  • Step 10

    While the koftas are cooking, make the Asian slaw. In a large bowl, whisk soy sauce, vinegar, lime juice, sugar together. Add the remaining ingredients and toss together until everything is coated

  • Step 11

    When the unit beeps and the display reads FLIP, open lid and use silicone-tipped tongs to flip the koftas. Close the lid to continue cooking.

    When cooking is complete, open lid, remove skewers from grill and serve hot with chips and Asian slaw
