Jackfruit Tacos with a Chive Sauce
Vegan tacos made by seasoning jackfruit and creating the creamiest chive sauce that is higher in protein than the norm thanks to silken tofu.

- 1 can of jackfruit (drained)
- 2 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp garlic granules
- 100g dairy free sour cream
- 1/4 tsp salt
- 2 tbsp fresh chives (finely chopped) plus more for garnishing
- 150g silken tofu
To serve with
- Mini tortilla wraps
- Sliced radishes
- Shredded lettuce
- Avocado chunks
- Sliced spring onions

Step 1
Begin by preheating the oven to 180c. Shred the jackfruit using a sharp knife and a fork and place in a bowl. Add the olive oil, smoked paprika, ground cumin and garlic granules and combine before emptying onto a lined baking tray.

Spread out and place the tray into the oven for 30 minutes.

Meanwhile prepare the chive sauce by placing the chives, silken tofu, salt and sour cream into the blender and blend until creamy and green.

Serve the jackfruit on mini tortilla wraps with shredded lettuce, sliced radishes, avocado chunks and sliced spring onions.

Drizzle over the chive sauce and garnish with any remaining chopped chives. Enjoy.
