Khaman is a steamed savoury snack made with gram flour. It is very popular and widely enjoyed by South Asians. 

Cooking mode

Ingredients

  • 1 green chilli
  • 1/4 inch ginger
  • 2 cloves of garlic
  • 95g gram flour
  • 1 tsp caster/granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp turmeric
  • 2 tbsp lemon juice
  • 1 tbsp oil
  • 1 tsp eno fruit salt

Tempering

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/4 cup water
  • 1 tsp sugar
  • 1/4 tsp salt

Utensils

  • Step 1

    Spray a 15cm round tin with cooking spray. 

  • Step 2

    Add green chilli, ginger and garlic to a blender and add a splash of water. Blend till combined. 

  • Step 3

    Add the blended paste to a bowl with the gram flour, sugar, salt, turmeric, lemon juice and oil and mix thoroughly to form a batter. 

  • Step 4

    Stir in the eno salt

  • Step 5

    Pour the batter into the tin. 

  • Step 6

    Close lid of pressure cooker and cook on high for 15 minutes. 

  • Step 7

    Press Cancel and allow the pressure to release naturally for 10 minutes. 

  • Step 8

    To make the tempering, add the oil to a pan. 

  • Step 9

    Then add the mustard seeds. 

  • Step 10

    Once they crackle add the water, sugar and salt. 

  • Step 11

    Pour the tempering over the Khaman. 

  • Step 12

    Serve warm.
