These Linzer cookies are a quick, easy and delicious sweet treat that are sure to keep everyone happy!

Cooking mode

- 3 cups flour
- 2 egg yolks
- A pinch salt
- 200g cold butter
- 70g powdered sugar
- 2-5 tbsp cold water (optional)
- 100g jam (of your choice)

Step 1
Place the flour, salt and sugar in to a food processor bowl, and pulse it couple of times

Add the cubed butter and pulse until you get a coarse mixture (similar to bread crumbs)

Add the egg yolks, one at a time. Pulse until it’s all well incorporated

If the dough is too dry then add 1 tbsp of cold water at a time. Pulse before adding another tbsp of water. If you add too much and it becomes too wet then add 2 tbsp of flour

Divide the dough in half. Roll the dough to around 2-3mm thickness. You can always refrigerate before rolling out if it is too soft

Use a star-shaped cookie cutter to cut shapes. Use a smaller cutter to cut windows in to half the cookies to make the top star

Step 7
Place in a pre-heated oven at 175 C for 10-12 min, or until the edges are just barely beginning to turn golden

Leave to cool completely, then spread jam on to the bottom stars, and top with the a second cookie, and dust with powdered sugar
