Mango, Coconut & Pineapple Tartlets

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

For the base

  • 100g oats
  • 50g desiccated coconut
  • 4 tbsp coconut flour
  • 6 tbsp maple syrup

For the filling

  • 200g thick coconut yogurt
  • 4 tbsp sweetener
  • 2 tbsp coconut flour
  • 1 tsp vanilla extract

To decorate

  • fresh pineapple chunks
  • dried mango
  • desiccated coconut

Utensils

  • Step 1

    First make the base – Blend the base ingredients in your Ninja Kitchen food processor to form a ‘flapjack’ mixture then divide into 4 and press between 4 individual loose bottom tartlet tins, Chill in the fridge.

  • Step 2

    Beat together the coconut yogurt, sweetener, flour and vanilla then spread between the tartlet tins to fill each one and spread out evenly.

  • Step 3

    Arrange the fruit and coconut on top then chill for 1 hour at least.

  • Step 4

    Pop out of the tins and enjoy!
