Mixed Bean Chilli

A hearty mixed bean chilli recipe which the whole family is sure to adore!

I love to make this when I have a busy day ahead because it is a wholesome, quick and easy recipe but mainly because it keeps me full for hours!

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 1 tbsp oil
  • 1 red onion (diced)
  • 3-4 garlic cloves (peeled)
  • 1/2 inch ginger
  • 1 red pepper (diced)
  • 1 green pepper (diced)
  • 1 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 400g tin of chopped tomatoes (blended)
  • 400g mixed beans
  • 100g cannelloni beans
  • 350ml vegetable stock
  • To taste salt and pepper

Utensils

  • Step 1

    Heat the oil in a large pot over medium/high heat

  • Step 2

    Add the onions and saute for 6 – 7 minutes until golden brown

  • Step 3

    In the mean time, add the garlic and ginger to a blender with a splash of water and blend in to a paste

  • Step 4

    Add the peppers, ground coriander, ground cumin, chilli powder and smoked paprika in with the onions and cook for 5 minutes

  • Step 5

    Stir in the pureed tomatoes, stock and both tins of beans and season

  • Step 6

    Bring to a boil, turn the heat down, cover and leave to simmer for 35 – 40 minutes Note: You will need to check it at intervals and stir to ensure that the beans are not sticking to the bottom of the pot

  • Step 7

    Serve and enjoy!
