One Pan Gluten-Free Pasta

This One Pan Gluten-Free Pasta is packed with flavour and ready in less than 15 minutes. Perfect for all the family and those on a gluten-free or vegan diet.

Utensils required


  • 1 tbsp coconut oil
  • 1 onion (small dice)
  • 2-4 cloves garlic (finely chopped)
  • 1 red pepper (diced)
  • 2 tsp dried oregano
  • 1 tbsp tomato paste
  • 1 x 400g tinned tomatoes
  • 750ml vegetable stock
  • 1 tbsp coconut sugar
  • 1 tsp balsamic vinegar
  • 1 Zest of lemon
  • 300g gluten-free spaghetti
  • 250ml cold water
  • 20g butter/vegan butter
  • 30g fresh basil, leaves only

  • Step 1

    Melt the coconut oil and fry onion, garlic, red pepper, dried oregano, and tomato paste for 1-2 mins, add tinned tomatoes, stock, coconut sugar, balsamic vinegar, and lemon zest then stir together. Add the spaghetti, pushing it down under the tomato and stock mixture.

  • Step 2

    Cover with the lid and increase the heat, bringing to a boil for 8 to 10 minutes using tongs or a fork to move the pasta. If the sauce begins to become too thick pour in a little cold water at a time. The pasta should be al dente when ready.

  • Step 3

    Stir in the butter and fresh basil leaves. Season with salt and pepper if needed. For a complete meal add your favourte vegan protein source or grated cheese.
