Orange & Sultana Oat Cookies

What are you leaving out for Santa this year? Make these festive cookies for the perfect treat to leave out on Christmas Eve, or better still to enjoy with family alongside a cup of tea or mulled wine this December.

  • 200g jumbo oats
  • 80g plain flour
  • 60g almonds
  • 60g sultanas
  • 1 orange
  • 1 tsp cinnamon powder
  • 4 tbsp coconut oil
  • 6 tbsp maple syrup
  • 1 tsp baking powder
  • Pinch of salt

  • Step 1

    Pre-heat your oven to 160 degrees celsius.

  • Step 2

    Add the almonds to your food processor and blend into a coarse flour-like consistency.

  • Step 3

    Add the oats, flour, ground almonds, sultanas, cinnamon powder, baking powder and salt to a large mixing bowl and combine.

  • Step 4

    Gently melt the coconut oil (either in the microwave or pan).

  • Step 5

    Add the melted coconut oil and maple syrup to the mixing bowl along with the juice of 1/2 the orange and zest of the whole orange.

  • Step 6

    Line a baking tray with baking paper.

  • Step 7

    Scoop out the mixture with a spoon and shape into cookies using your hands. Place on the baking tray.

  • Step 8

    Bake for 15-18 minutes or until golden.

  • Step 9

    Allow to cool for at least 15 minutes before tucking in!
