Peri Peri Grilled Chicken

This Peri Peri Grilled Chicken is a South African delicacy. This meal is perfect for anything from date night to a family event.

Ingredients

For the Chicken

  • 4 whole chicken legs, skin on

For the Marinade

  • Juice of 1/2 lemon or lime
  • 3 crushed garlic cloves
  • Pinch salt

For the Peri Peri Sauce

  • 1/4 red pepper or 1-2 fiery red chillies
  • 1/4-1/2 tsp cayenne pepper
  • 2 garlic cloves
  • 50ml lemon or lime juice
  • 2 tbsp smoked paprika
  • 50ml olive oil

For the garlic bread

  • 2 french baguettes
  • 4 tbsp olive oil (use more if needed)
  • 2 crushed garlic cloves
  • Pinch salt
  • 2 tsp oregano

Method

  • Step 1

    To prepare the marinade mix the garlic, lime and salt together and pour over the chicken

  • Step 2

    Cover and leave to marinade for an hour (you can skip this bit, but it tastes better if you don’t)

  • Step 3

    Insert grill plate into your Ninja Foodi Health Grill and Air Fryer and close the lid. Turn the grill function to high and set the timer for 30 mins (although it might take less time, it won’t take more). Hit the start button. Once the Ninja beeps, it means it’s a perfect temperature

  • Step 4

    Sprinkle the chicken with a little salt and put it skin side down onto the grill, closing the lid

  • Step 5

    Take a look after ten minutes, and if the skin looks nicely sizzled with grill marks, turn it over. If not, cook for a few more minutes and then turn it over, close the lid, and cook for another ten minutes

  • Step 6

    Then brush both sides with the Peri Peri sauce and cook for another 5 minutes, turning over halfway through

  • Step 7

    Take a piece of chicken out and with the point of a sharp knife prick into the chicken near the joint to check if it’s cooked through. Then let it rest on a warmed plate whilst you make the garlic bread

  • Step 8

    Set the grill on medium for 6 mins and mix the olive oil, oregano and garlic together. Cut the bread lengthways and then dip into the herbed, garlic oil. Place on the Grill and cook for 3-5 mins
