Poached Pears in Blackberry & Red Wine
Cooking mode
When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
- 200ml red wine
- 100ml blackberry brandy
- 1 vanilla pod, split, seeds reserved (or 2 teaspoons vanilla extract)
- 6 large firm pears, peeled

Step 1
Place wine, brandy, vanilla pod and seeds into the pot. Place pears on top of liquid.

Assemble the pressure lid, making sure the pressure release valve is in the SEAL position.

Select PRESSURE and set to HIGH. Set time to 10 minutes. Select START/STOP to begin.

When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure.

With a ladle, drizzle sauce over the warm pears for about 3 minutes. Remove the pears and place into a deep dish; set aside.

Select SEAR/SAUTÉ and set to HIGH. Select START/STOP to begin. Allow sauce to reduce for 10 minutes, stirring occasionally.

Let the syrup cool before pouring over the pears. If desired, place poached pears in the refrigerator to develop flavors overnight.
